Chicken Salad Sandwich Recipes
So fun and simple! That’s why so many people love chicken salad sandwich recipes. In my home Chicken Salads do not usually make it to the left-overs status Francostone but if they do, they definitely don’t go to waste, they get recycled as chicken salad sandwiches.

Ingredients:
2 cups white meat, cubed
2 cups diced celery
1 cup mayonnaise dressing
1 cup of French dressing
Optional garnishes: watercress, gherkins, stoned olives, celery tips
Instructions:
Marinate the chicken with the French dressing and set aside for an hour to season and chill.
At serving time add the celery and mayonnaise to the chicken mixture
Arrange on torn lettuce and garnish with watercress, gherkins or stoned olives or drop a larga spoon of mayonnaise on the top and sprinkle with celery tips.

Ingredient for chicken salad sandwich with lemon:
4 skinless chicken breast halves
2 stalks celery
1 medium white onion
1 large lemon (zest and juice)
2 hard cooked eggs
1 tsp paprika
1 tsp seasoned salt
2 1/2 Tbsp mayonnaise
1 Tbsp djion mustard
8 slices sourdough bread Muenster cheese slices
Instructions:
In a large pot, combine chicken breasts, one half of the onion (coarsely chopped), and one of the celery stalks (cut in thirds).
Simmer about 25 minutes, until chicken is cooked through. Cool, remove from bone and chop chicken into small pieces.
Place in a large bowl. Chop the remaining onion half and celery stalk, along the eggs, into small pieces and stir in with chicken.
Add mayo, mustard, paprika, seasoned salt, and the zest and juice
